4 ripe bananas, mashed
4 large eggs (24g protein total)
4 scoops vanilla protein powder (48g protein total)
11/2 cups all-purpose flour (24g protein total) Note - I prefer to use King Arthur's Flour.
¼ cup almond butter (24g protein total)
3/4 cup plain Greek yogurt (18g protein total) - I used Plain Oikos Pro Tripple Zero (or dairy-free Greek-style yogurt)
1/2 cup milk or unsweetened almond milk (~4g protein total)
2 teaspoon vanilla extract
2 teaspoon ground cinnamon
1 teaspoon baking soda
½ teaspoon baking powder
¼ teaspoon sea salt
Optional Add-Ins
2 tablespoons hemp hearts (6-7g protein total)
¼ cup chopped walnuts or pecans (~4g protein total)
1/4 cup raw local honey (I drizzled it on top when the bread was done baking!)
Unsweetened dark chocolate chips
Ground flaxseed (1.9g protein per 1 tbsp)
Chia seeds (~4.7g protein per 2 tbsp)
Directions
Preheat your oven to 350°F (175°C).
Grease or line a 13x9-inch cake pan with parchment paper. I greased it with room temperature butter.
In a large mixing bowl, mash the bananas until smooth.
Whisk in the eggs, almond butter, Greek yogurt, milk, and vanilla extract.
Add the protein powder, flour, cinnamon, baking soda, baking powder, and salt. Stir until just combined. Avoid overmixing.
Fold in any optional add-ins.
Pour the batter into the prepared loaf pan and smooth the top. Lightly dust the top with cinnamon.
Bake for about 40 minutes, or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10–15 minutes before transferring it to a cooling rack.
