The recipe below makes 32 regular sized muffins. I end up freezing half of the batch since it’s only my son and I that eat them. The measurements of the honey and maple syrup is what I found to be the “sweet spot” after many attempts of tweaking.
Ingredients:
4 ripe/over-ripe bananas
3 cups whole/raw milk (or milk of choice)
4 cups rolled oats
3. eggs
~1/2 cup honey (raw local honey is best!)
4 tablespoons maple syrup or brown sugar (I prefer to use local maple syrup)
~2 tablespoons cinnamon
1 teaspoon turmeric
2 teaspoons Himalayan or Celtic sea salt
1 1/2 cup organic peanut butter or choice of organic nut butter (please note- organic peanut butter ingredients should only be peanuts and maybe salt)
Recipe:
preheat oven to 350F
In a large bowl, mash up bananas
mix in peanut butter, salt, cinnamon, honey and maple syrup
mix in rolled oats and eggs
mix in milk
in cupcake tins, line with cupcake paper or with butter
fill just below the top with the mix/batter
bake for 30 minutes
let cool for 10 minutes and enjoy!
